Mom’s Four Cheese Chicken – It’s What’s For Dinner!

One of my favorite meals growing up was my Mom’s Four Cheese Chicken.  It was so cheesy that it even made the broccoli taste great!  I wish that I could convince David of the same…but to date, he’s pretty dead-set against broccoli.  Oh well, you can’t win ’em all, eh?  Still, he likes this meal because of the cheesy chickeny goodness.  So maybe you will like it, too!

This remains one of my favorite meals now that I am “all growns up,” because it reminds me of a simpler time.  A time when I had no idea what my Dad meant when he kept telling me that money didn’t grow on trees, and that it actually cost money for me to keep leaving all the lights on in the house.  Honestly, I didn’t really believe him.  I mean, how stupid sounding is that?  Somebody sends you a bill for leaving your lights on??  Yep, this meal takes me back to a time when I had no idea what a bill even looked like.  Those were the days!

Four Cheese Chicken by My Mom!

Preheat oven to 375°

What You Need:

-4-6 boneless, skinless chicken breasts

1 bag thawed broccoli florets (I suppose you could use fresh, but I never have since Mom never did!)

-1/4 cup crushed cheese crackers (I usually use Cheese Its, but tonight the best we could do was cheddar flavored Pringles and Hot n Spicy Cheese Nips)

-3 tbsps parmesan cheese

1 can condensed cheddar cheese soup

1-2 cups shredded cheddar jack with jalepenos (sooo good!)

2 tbsps butter

1/2 cup milk (I like to use a little more – somewhere just shy of 1 whole cup)

What to do with all that stuff:

-Place chicken breasts in a baking dish

-Cut butter into pieces, sprinkle over chicken

-Bake uncovered for 40 minutes.

-Place broccoli around chicken.

-Mix soup, milk and shredded cheese, pour over broccoli and chicken.

-Mix crackers and parmesan, sprinkle over all.

-Bake 20 minutes more, uncovered.

I’ll have to try this; it looks great and unlike David, I LOVE broccoli.
